테이스팅 메뉴 전문 레스토랑 아토믹스(Atomix)의 셰프/오너 박정현씨가 오는 10월 25일 한식 요리책 'The Korean Cookbook /한식'을 출간한다. 

 

박정현씨와 요리연구가이자 셰프 최정윤씨가 공동으로 집필한 'The Korean Cookbook'은 예술책 전문 출판사 파이돈(Phaidon)에서 세계의 요리책 시리즈의 일환으로 나온다. 이책에는 서울에서 제주도까지 방방곡곡의 가정 부엌에서 발견되는 일상의 요리 레시피를 소개한다. 찬장부터, 발효식품, 밥, 야채 요리, 날음식, 국수, 볶음, 고기 구이, 국, 찌개,전골, 국수, 만두, 죽, 떡, 디저트 등 350여가지의 조리법을 망라했다. 496페이지. 가격 $54.95. 아마존에서 선 주문할 수 있다. 파이돈은 일본, 중국, 남미, 영국 요리책을 출간한 바 있다. 

 

 

 

박정현씨는 경희대학교에서 조리과학을 전공한 후 교환학생으로 핀란드에서 시작, 런던 노팅힐의 미슐랭 2스타 식당 레드베리(The Ledbury)에서 호주 출신 셰프 브렛 그레이함(Brett Graham) 아래서 인턴으로 수련했다. 이후 호주 멜버른의 식당계의 귀재 앤드류 맥코넬(Andrew McConnell)의 레스토랑(Cutler & Co., Cumulus Inc.)에서 3년간 일하며 경영감각까지 배웠다.

 

이후 귀국해 한식 조리법을 공부하다가 2009년 CIA 출신 임정식씨가 오픈한 서울의 정식당에서 수석셰프로 일했다. 임씨가 2012년 봄 맨해튼 트라이베카에 정식(Jungsik)을 오픈하면서 박정현 셰프도 뉴욕에 입성했다. 정식은 박정현 셰프(chef de cuisine) 지휘 하에서 미슐랭 1스타를 거쳐 2012년 2스타를 받은 최초의 한식당으로 등극했다.

 

부인 엘리아 박씨와 2016년 아토보이, 2018년 아토믹스, 2022년 록펠러센터에 나로(Naro)를 오픈했다. 2023년 아토믹스 셰프로 제임스비어드재단상 뉴욕주 최우수 셰프를 수상했으며, 월드 베스트 50 레스토랑 #8위에 선정됐다.
